[Eng x Mand] Homemade Steamed Minced Pork 太阳瓜子肉


You're home late with a miserably empty stomach. You need comfort food more than anything else. Lucky you, Homemade Steamed Minced Pork is your perfect mate for tonight: it's comforting, and easy to make.

Homemade Steamed Minced Pork is a typical Taiwanese household dish. In Malaysia, we have a few adaptions to this famous dish too. These adaptions generally use ingredients which are more commonly found in Malaysia. Nevertheless, let's make this dish in Taiwanese way, it tastes similarly addictive too!


Ingredients

  • 300g Minced pork belly

  • 1/2can Canned pickled lettuce, chopped + 2 tbsp of the juice from the can

  • 1 stalk Spring Onion, chopped

  • 1tsp Cooking wine

  • 1.5tbsp Soy sauce

  • 1 Egg, separating yolk

  • White pepper, to taste


Method


  1. Place the minced meat in a large mixing bowl. Add in cooking wine, white pepper, pickled juice and soy sauce. Mix well with hand.

  2. Add in the egg white and continue to mix. After adding in pickled lettuce and spring onion, place the mixture onto a plate, spread and even the surface of mixture.

  3. In the middle of the patty, use the back of a spoon to press a small indent. Carefully put the egg yolk into it. Place the plate onto a steaming rack over boiling water, cover and steam for 15-20 minutes.

材料

  • 300g 五花肉绞肉

  • 小菜心半罐 + 小菜心酱汁约2大匙

  • 一根 葱

  • 1小匙 酒

  • 1.5大匙 酱油

  • 1颗 蛋

  • 少许 白胡椒


事前准备


  • 肉从冰箱取出,回到常温状态

  • 葱切成葱花、小菜心切碎

  • 将蛋黄和蛋清分离备用


步骤

  1. 将绞肉放进大容器中,加入酒、白胡椒、小菜心酱汁、酱油以手搅拌均匀。

  2. 加入蛋清继续搅拌,并加入小菜心、葱花和匀后,放入耐热容器中将肉表面稍微压平整备用。

  3. 在肉中间用手或汤匙轻轻按一个浅槽,将蛋黄放进去,把耐热容器放进滚水中,盖上锅盖,镉水蒸 15 - 20 分钟即可。
